Egg Nog
Ingredients:
1/2 cup egg substitute
2 tbsp sugar substitute
2 cups skim milk
1 tsp vanilla
1/2 cup fat-free creamer
1/2 tsp nutmeg, cinnamon, or pumpkin spice
*Alcoholic version: 2 tsp rum extract; or 2 tbsp of rum, brandy, or bourbon
Preparation:
Pour ingredients into a container, mixing until thickened.
Cover egg nog and allow to chill for at least two hours.

Whole Wheat Gingersnaps
Ingredients:
1/2 cup natural applesauce
1.5 tsp ginger
1/2 cup Splenda Sugar Blend
3/4 tsp cinnamon
1 Eggbeater (1/4 cup)
1/2 tsp nutmeg
1/3 cup molasses
1/2 tsp cloves
2 cups whole wheat flour
1/2 tsp all spice
1.5 tsp baking soda
1/4 tsp salt
1 tsp baking powder
Splenda sugar blend on a plate to roll cookies in before placing on baking sheet.
Preparation:
Preheat oven to 350 degrees.
In large bowl mix together applesauce, sugar blend, eggbeater, & molasses.
In medium bowl mix dry ingredients - flour, baking soda, baking powder, ginger, cinnamon, nutmeg, cloves, all spice, & salt. Add dry ingredients to wet & mix thoroughly.
Roll dough into 3/4" - 1" balls, then roll in sugar. Place cookie on greased, foil-lined baking sheet. Pat cookie down to flatten slightly. Try taking a juice glass with a flat bottom & tapping them once or twice. As long as they are rolled in sugar, it won't stick to the glass.
Bake in oven 10-12 minutes. Be careful not to overbake to maintain softness.
